The problem of cadmium in cocoa and cocoa prices: Cadmium andheavy metal content has been monitored in Europe for more than ten years. Elsewhere in the world, this is not regulated and, until recently, was not even monitored, which is why cocoa with a high cadmium content was sold in other parts of the world, giving us cheap cocoa in Europe. Powder with a higher cadmium content can be used in production, as the final product will meet the required standards.
However, initiatives are currently emerging, and above all, customer awareness is growing elsewhere in the world, with people wanting safe products. This has significantly increased the demand for cocoa with low cadmium levels worldwide, and cocoa powder with acceptable levels of cadmium, nickel, and lead is in short supply around the world. If we add organic certification, i.e., zero pesticides, herbicides, and fungicides, to this, a supply crisis arises.
Heavy metals are found in dry matter, which means that cocoa butter does not have this problem and cocoa mass contains on average 5 times less cadmium per 1 kg.
