Organic cocoa mass from Peru.Cocoa mass in nibs, ideal for confectioners, bakers, ice cream makers, and others.
The nibs are the ideal size of around 3 cm for easy weighing, dosing, and melting.
Cocoa mass consists of roasted cocoa beans without shells, finely ground in a melanger and deacidified by conching.
Also known as 100% chocolate, sugar-free chocolate, or cocoa paste.
English names are cocoa mass, cocoa liquor, cocoa paste.
Non-alkalized.
