Our 100% chocolate is also available in grated form that makes it easier to melt when making either a ceremonial cocoa with water, or when making chocolate, baking etc.
When used right cocoa mass is a better substitute for cocoa powder for majority of recipes. And it has 55% of fat compared to 10% in cocoa powder, so you get much richer and higher quality ingredient, needing less cocoa butter or other fat in the recipe. The only real use case when cocoa powder can't be replaced is for dusting, because cocoa powder doesn't melt when heated.

Chocolate production process:
- fermentation - 120 hours
- drying - 7-10 days in the shade and in the
sun - roasting 104-125 degrees
- grinding with a melanger, chocolate did not undergo tempering
